Singing and fiddling at the same time is something that takes deliberate practice, that's for sure! I can do it (not well) for some simple songs. Usually, when it's my turn to lead a song in the jam circle, I switch to my banjo. In my opinion, it's much easier to sing and play when you're playing a chord-based instrument, like the guitar. Fiddler's don't typically think that way, at least I don't.

More importantly, I find it hard to lead a song in the jam circle when I'm playing the fiddle. First of all, folks can't read your fingers to figure out what chord we're on (like most can do with a guitar). Second, I find it hard to lay down a solid rhythm on the fiddle when others are taking their lead and looking at me to provide the structure.

The song now known as "The Blackest Crow" and often sung and played on the fiddle, I believe comes to us from Tommy Jarrell, who, even though he could sing and play the fiddle, chose to accompany himself on banjo for his recording of "As Time Draws Near" - even though its in 3/4 time.
